I have an existing Drupal website which includes a shopping cart and payment gateway.

I’m looking for someone who can put a backup process in place for me. I'd like to be able to have my entire website backed up automatically as per a set schedule, and I'd also like to be able to initiate a backup from time to time as required.

Neither my webmaster nor my webhost provide these functions.

you don't state what version of drupal you are using.

Have you investigated the backup.module in the downloads area?

I manage some Drupal-based websites for non-profits, and wanted to give
the non-technical people who run the organizations a way to back up their
data over the web, in case I get hit by a beer truck or something.

This module is pretty simple, it allows you to download a backup of your
Drupal DOCUMENT_ROOT and database over the web.

You can use backup modules to creates a tarball that consists of your Drupal database and all files under DOCUMENT_ROOT.

Download it from http://drupal.org/project/backup.
