I am trying to email in images, and instead of creating a node, with the text of the email, and instead of an image module type node attached to it, I was wondering if there is some way to create *just* an image node with the email content as the body?

Simply use the "mailsave to image" module of mailsave. That does exactly this - the first jpeg becomes the image, and the body of the email becomes the body of the node.
