I agree with Droople in regards to CCK, Views, and Pathauto..
But I would also add Drupal Administration Menu. It makes your life of administering a site so much easier than navigating through the endless pages of drupal admin.
Finally, if you are a developer, the Devel module is one not to overlook.

CCK and Views are pretty
CCK and Views are pretty much a must have. Which means you'll be playing in the 5x sandbox for a little while longer.
A good place to find modules of interest is by visiting http://groups.drupal.org and find a group that shares your same interests. For example, I am developing a news based political junkie type site and found a newspaper group. I found a bunch of modules by viewing the group posts.
