Im using views with exposed filters together with views checkboxes and views filter block. On all exposed filters I have the Optional checkbox selected. The first item acts as select all (in other words, ignore the filter).

Id like to change this blank text to read something more intuitive, such as "Select all" or "Show all". I'd appreciate if you could point me in the right direction, any simple hack should be fine as this text will be used for all such fields on this project. It may be useful in future versions to open a text box when Optional is selected, allowing users to input text for this item on a per filter basis.

Sorry, unfortunately this support request is way too specific. Please have a look at the issue queue - Views maintainers are buried already. You might want to try to get further support at http://drupal.org/support. Additionally, the answer to your question might be covered in the handbooks at http://drupal.org/handbook/modules/views already.
If you were able to solve this issue on your own in the meantime, you might want to add the involved steps to this closed issue, so other users searching for a similar solution might find it.
