how do I do it if I want it to collect information from all autenticated users and anonymus users except thoose that belong to a third role?

Sorry I am not sure what you are asking, visibility_api does not collect any data on its own :P which module(s) are you using which require visibility_api?

It would be best to post an issue on the firestats project page, as they can implement visibility_api in any way they see fit which could be globally or on a per user level.
