changing color in any recolorable theme breaks the theme and form there on when I select that themes, all I get is plain non-css non-theme.

I have seen this a few times before as well. I think it boils down to write permissions of the temp dir that drupal writes. I am not exactly sure if this is a drupal specific issue or a server setup. Maybe someone can chime in?

I do know that in the past I fixed the issue by deleting the temp folder manually an re-creating it with write permissions, then redoing the color change.
