not sure how to do this or if i can...i want to be able to organize my clients "content types" under:

--Contact

--Products
--Services

I would want it to refelct the structure of the menu which is

About
Products
Services
Contact

is this possible? i thought i could do this using CCK's but no luck

Activate the menu module, then go to Site building -> Menus. You can configure the order of menu items and which items to show and to hide.
