I need to be able to schedule articles to be published weeks in advance, and it seems that Workflow-ng is my best bet, however it's not recommended for 6.x. Should I stick to 5.x just for Workflow? I see theres a 6.x project called Rules, but it doesn't seem stable yet.

If Workflow-ng is essential for your site, then yes, it is best to stick to 5.x until the Rules module is ready for 6.x.
