Whenever I update a node, for any roll that doesn't have "administer nodes" turned on cannot view that node.
I've never come across this before and have built plenty of Drupal web sites.
ANy ideas what's going wrong here?

Same Problem Here
I am having the same problem. I have been trying to figure it out for a few days and can't seem to get it.
I don't know what is doing it but the node entry in "node_access" is being delete. I manually go in and re-add it and the node is accessible again.
Assistance would be greatly appreciated.
I just followed these steps
I just followed the steps at http://drupal.org/node/64114
This seems to have granted me access to content again and if I edit or create a node, they can still be viewed.... so far so good.

How it happened
I'm still unsure how the problem occurred in the first place.
One theory... I might have had taxonomy access module installed and realised I didn't need it. I uninstalled it and removed the files, but have had trouble with taxonomy access before sot his could have corrupted things somehow.

I have the taxonomy access
I have the taxonomy access module installed but I am not using, it is disabled. I was test its functionality. Once I enabled it, the problem went away.
