I am using Dropal 6.x but I noticed all the guides I have come across were written for 5.x

With that said, would you recommend a new Drupal user use 5.x and upgrade to 6.x once I am comfortable?

If not, what advantages are there to starting off with 6.x

Drupal 5.7 has a more mature code; meaning more resources for you to learn from.

Drupal 6 has cool features that are not included in the previous version.

In my experience I have to stay with 5.7 due to TAC module that is vital for my application.

you there are some modules that you must have and they aren't available as stable releases for Drupal 6, then go with Drupal 5.

There's nothing wrong with 5, and the only problem with 6 is that many of the contributed modules have been reworked and aren't ready yet.
