Hi, I'm creating a site where a user can enter some demographic data into a webform and upon submitting the form will receive a chart. Can someone please recommend which modules to use?

One option is the Chart API module. Only released for 5.x, but snufkin has submitted a 6.x version for review. There's some notes about using the module here.
Another option is SWFCharts. Also a 5.x only release, but there is a similar user-submitted patch for 6.x. This module requires a separate Flash component that is not GPL... if fact, the license kinda' sucks.
