I am looking of a good 3-column theme that I can modify. It is really hard to tell from the themes on the download page which are this way. I think that most 3-column themes would work for me, but something similar to Ecademy (http://www.ecademy.com) is the general idea (content in the middle column).

You can configure the Xtemplate theme to use 3 columns. Enable the theme and set the "sidebar placement" setting accordingly at "Administration > site configuration > themes > xtemplate".

I too would like a three column drupal front page. I see that xtemplate can create 2 sidebars: one on the left and one on the right side. My question is how does a user create posts using xtemplate in the side bars and not in the main area (or all three)? In my limited experience, all I can see is how the administrator can managed blocks by posititioning this in the sidebars.

The sidebars are populated with "blocks". An administrator can add and delete blocks from the "blocks administration" page. It is possible to create blocks with custom content but only if you have the proper access rights. If desired, users can choose to disable (or enable) certain blocks.

Can sidebars be populated with the contents of $nodes (i.e. stories, posts)?
