It would be really useful to have an option to hide the email field and force all emails to go to a certain address, like the admin, so that the user could request more information about the products they selected or what not.

I've added this as an option, along with an option to send the email to multiple people via a comma-separated list. I've committed the changes to both the D5 and D6 development branch, so you can grab them immediately via CVS, or after the build script runs by downloading the dev version.

Once they've been tested a bit I'll commit them to stable releases.
