Is there a list of them anywhere?

In theory, any theme, but none yet. I'm working on a demo version of Garland that supports icons - it should be done real soon. I'll also upload a couple of demo icon sets, so people can try out switching between sets, and will set up a demo site so everybody can try it all out. Will let you know here when it's done.

It would be great to do this for the Zen base theme as well.

It includes icons from the GPL'ed linux icon sets Gnome and gPerfection.
An icon enabled Zen theme is a good idea!
