Is there a way to add another currency to the list of 4 default currencies. Changed in signup_pay.module to replace CAD with ZAR, it didn't work, the Paypal page says, this seller do not accept USD! Idea is TO show users currency in ZAR, but they can pay with USD on Paypal.

You have to change simple_paypal as well to have the same currencies.

Moreover, you have make sure that your Paypal account accept the new currency as well.
