I want to create a site to manage a hotel, with a description , prices, equipments ...
Do you think that Drupal could be a good solution?
By using cck to create a new type of content?
Or developing my own module?

Yes.
Yes, yes, and yes.
Creating your own node type and using CCK to fill it out will get you 90% of the way. Other mods will help. But if you want anything special (scheduling, billing, etc.), things get complicated really fast.
Your use case sounds similar to mine (managing a University department). I invite you to describe your use case in depth in the Resource Management group, so that any solutions we find are documented for others later.
