You must be able to do this, but I can't for the life of me work it out. How do I disable avatars based on the node content type?

You could make content type
You could make content type specific node.tpl.php files, and remove the "print $picture" lines from the ones where you don't want the pic. Alternatively you could just add some php to test for the appropriate content types and set $picture to empty in template.php.
