Would it be possible to create an Action that remove lets say a "new item" tag from a node after a set period of time?

First, be aware of that: this module offers triggers, not actions.
Then I found somewhere in the drupal.org module project pages that there is a module doing exactly what you want... Heve fun searching, it's worth it!
