How do I create a 5x2 gird of thumbnails, with some spacing between them?

gallery styles are all there and available for being over-ridden in the typical theme function manner. You could also create your own gallery type. If you are unfamiliar with theme functions you need to read up on those before attempting this.

Is there a possibility using the theme overrides you suggest that you could limit the amount of images per page, e.g. have 1 image per page with a pager at the bottom of the page to navigate through the rest of the images in the node
