I am doing my first upgrade from 5.7 to 5.10. In the instructions it says to disable all modules. If I do this, won’t all my module settings be lost and if the module is for a content type, e.g. audio, won’t all my content of that type be deleted?

Disabling modules only ... disables the modules. To delete configuration, you have to run the uninstall routines (if provided). Even then, nodes are not deleted.

No, disabling modules only "turns them off" but their data remains in the database. When data will be lost is if you go to the Uninstall tab, check the box next to the module, and continue. At that point a database query is run that deletes the module's data.

However, in general I don't think you "need" to disable modules during an upgrade within a major release (e.g. 5.4.-> 5.10, or whatever). I have never done this once in 2 years and never had a problem with upgrades. You probably DO need to disable (but not uninstall) them though when upgrading from 5.x to 6.x.
