I am sure this is a fairly simple procedure, but after extensive searching cannot find solution. How do I stop my own IP address from showing up in all the valuable statistics such as most frequently visited pages and top referrers? (without 'banning' my own IP address of course)

Not part of core
Sorry Renaee, but the core statistics module doesn't handle this. If you can get sql access to the accesslog table, you can do your own custom queries on the table. The node_counter table doesn't handle user data.
Try making a request on one of the non-core statistic-like module authors. It would be a nice feature.
