I setup gmap and know now how to build maps with the array method.

I cannot find any reliable info on how to use such maps with the locpick.js to fill a latlong field : get the values of latitude and longitude from a click on the map.

here is a perfect example of was I want to do, but no available code... snif !

The example you link to demonstrates out-of-the-box behaviour for the locations and gmap module combination. You don't need code to recreate the examples there.

Exact, I just needed to go deeper in the form API and now have been able to do all what I expected.
