So what is the conensus today when choosing Drupal? Does it make more sense to install 5 or 6 if we were to do it today?

You should use D6
We are now 100% developing on D6. There will be issues but if you are a developer and familiar with Drupal, you can fix them along the way. II'd recommend that anyone should now look at D6.

I would recommend choosing the version based on what you need. Think about what requirements your site has and see if the modules are developed for 6 yet. If they are developed... definitely go with 6. If the modules aren't developed yet, and you absolutely need them, then you should go with 5. If you do use 5 and modules are not yet ready for 6, then be sure that the modules will be developed for 6. You don't want to keep your self on an old version, just because a module didn't get updated.

Fully agree with you, it won't be wised if you choose Drupal 6.0 in the early of this year since a lot of important modules haven't been developed, such as CCK, View.
But considering the current status of Drupal 6.x now, I would like to recommend it if you don't have very special requirement.

For the usual SEO & usability ones (clean URL, seo friendly, wysiwyg editor etc...), would there be good modules in 6 already? It's tough to really know what modules we need before we have much experience with either versions. Does anyone have any tips or guides in this area?

Keep in mind that, before too long, you will have to either go to drupal 6 or be left with an obsolete site with unsupported modules. As I understand, the drupal community officially supports only the latest two official releases (currently drupal 6 and drupal 5). When drupal 7 is released, drupal 5 will be left in the dust.
I keep hearing that it is relatively straightforward to upgrade from drupal 5 to drupal 6 (assuming your basic modules are all available), but as yet have not succeeded at this with a basic test site myself.
If you aren't yet using drupal or if you don't have a very specific drupal 5 module you are already using that you feel you must, must have now, and you know that is not available now in drupal 6, then I would recommend going with drupal 6. The first reason for this is that a drupal 5 site will need to be upgraded soon to drupal 6 in any case. The second reason is that, as long as you don't demand a specific module do it, most of the tasks that can be accomplished with drupal 5 at this point can be better accomplished already with drupal 6.
To answer your specific question above, I'd suggest a good long look at the module downloads section of drupal.org, filtering alternatively for drupal 5 and drupal 6, and looking closely at documentation and issues queues for the most important modules to give you a sense of what is and what is not doable at this point, and what to expect in the near future...

For clean and SEO friendly url's you don't need contributed modules, they are features of the Drupal core. Wysiwyg editors are available for D6 (for instance http://drupal.org/project/tinymce).
If you can describe the site you want to build (content, functions, navigation) people on the forum can probably help you decide which modules to use.

If you can list out the major features needed for your website then depending on that it would be easier to present a proper suggestion.

Drupal 5 here, until the Boost module is ready for D6
For example, in my case, I'm preparing the conversion of a couple of fast, server-friendly static html sites to Drupal. For performance and optimization reasons, the Boost module (static page caching for non-logged in visitors) is needed. Therefore, I have to use Drupal 5 until Boost is updated for Drupal 6.

I will build new site with forum and in version 6 forum is improved, and I have decided to use 6.
On two other sites I use 5 because, they are preety basic, and it shame to say I am lazy to upgrade which I should
do because if have all sites in 6 then is easier to have overlook (I hope it is the right word) and easier maintanance.
I think if you can find all modules for 6 which you need then use 6, if you cannot find all modules for 6 and there are modules for 5 use 5.
If you cannot find modules for 6 or 5 then buy a book "Drupal Pro Development" and then learn how to build modules and then you are your own Drupal boss. :=)))

An interesting possibility is to use the Advanced Forum module, available for Drupal 5 and 6.
Drupal 6 port for Boost
At Contributed modules status - version 6.x, I've just seen there is a patch, Drupal 6 port, to update the Boost module. That's very good news.
However, other very useful modules (such as Comment mover, excellent for forum maintenance) are still in Drupal 5 versions.

At this point in time, it seems the only compelling reason left to choose 5 over 6 is ecommerce-- both ubercart and ecommerce are still under heavy dev for d6 and so only the d5 versions of those modules should be used in production sites atm.
