I create an organization but it doesn't appear in the drop down list for projects, likewise, projects does appear in task, at which stage I get a "no organization" error.

This is my 1st install, so I don't yet have experience of actually using the module.

Same problem here. I installed this module for the first time now to play with it.

I create an organisation. I then create a project in which an organisation is not required. But when I try to add tasks, I get the error that an organisation needs to be selected. But the selection list is empty.

Exactly the same for me seems to be a bug. I cannot use the module. Shame cos it looks good.

Simply check the Customer and Active flags for your organizations and they'll appear in the list.
