I created a bunch of pages while logged in as admin (uid=1). After realizing that I don't really want to have to log in as root just to edit the pages, I reassigned them to another user ('editor') by changing the username in the "Authored by" field. But the 'editor' user cannot edit the pages.

The 'editor' user has "edit own pages" permissions. When i edit the page (as 'admin'), the username is correct, and when I print out the node's uid, it matches the uid of the 'editor' user.

Am I missing something obvious? Thanks in advance for your assistance...

It appears that a user, athough they have been made the author of a node, will not be able to edit it they do not have permission to use the format with which the node was created.
