Hello,
I would like to make the menu link editable so i can link it to a node, or alternative make the page where taxonomie menu link to editable so i can write something to the page.

additionally

I would like to have more than one view shown with a taxonomie menu entry ( i want to make a menu strucktur showing primary and secundary tags)

You should be able to do all this with Views. There is a working patch to use Views for taxonomy menu at #333145: Views integration.
