Subscription emails are being sent out, but the the body of the emails are blank therefore user's can't verify their subscriptions, I have ruled out MIME MAIL and have tried to uninstalled simple news then reinstalling it but that didn't help. I know it's something that's conflicting because I use simple news on a couple of other websites with simple news 6.x-1.x-dev and mimemail-6.x-1.x-dev, but on this setup simple news doesn't even work without mime mail so it's something else which I can't really figure out. I enabled email logging and here is the output. I am using drupal 6.6

ok, I just verified that all outgoing emails on the site are blank, so this is not a simple news module issue but a global site issue. gonna close ticket since this has nothing to do with simple news.

It's looks like Mimemail issue.
