I'd like to have certain pages in my site be full, without any side blocks. Header and footer blocks are okay, but how do I have a page-node that does not have side blocks?

The easiest way should be to visit the block settings (admin/build/block) and configure your blocks. In the block's configuration screen you should see the "Page specific visibility settings". Select the "Show on every page except the listed pages." and enter the pages where you would like to hide the blocks.
