I don't have the SimpleXML PHP extension available on my on my 1&1 hosting package so how does that affect my usage of the Feedburner module.

Right now, it really doesn't matter much. Some of the features have been disabled now that FeedBurner has moved to Google. Whenever those feature are reinstated by Google, I'll make a note of the advanced features in the README.
