I'm using the latest dev version (16 December 2008). I've enabled the "submit sitemap on cron run" and "log access" options. The search engines are being notified of changes, and this is being recorded to the recent hits log entries (i.e. cron successfully completed, sitemap successfully submitted to ... , etc.), but no log is being recorded for the sitemap being accessed. This applies to both access by a search engine and myself accessing the sitemap manually. I can see that it has been accessed by the search engines in the recent hits log.

Although this isn't the correct place, thanks to the developers and maintainers of this module. Can't wait for a stable release. XML sitemap is a great module.

The access log has not been yet implemented, in 6.x-1.x-dev.
The code is a port from 5.x-2.x-dev, and it's not a modified version of 6.x-0.x-dev; that part is not implemented in 6.x-1.x-dev because I was looking for a better way to implement it, if it exists.

Changing the category to support request as it's not a bug.
