Always backup (both your files and database) first. All your personal files should be within the sites directory, and "maybe" if you customized it, in the .htaccess file. In Drupal 6 your files directory is within the sites directory (though if you moved it elsewhere by hand, make sure you don't delete it) Everything else can be deleted and replaced with the new version.
My local development site is telling me to install two security updates -- 6.7 and 6.8. Am I correct in assuming from the message to Keyz that it is acceptable to go directly from 6.7 to 6.8...and ignore the request to install 6.7? In other words, 6.8 contains all new code contained in 6.7, yes?
Yes you can skip 6.7, as 6.8 contains everything needed to update from previous versions. In general you can skip minor versions like that (I personally only skip a few at most... if it's many versions behind, I'll usually do one or two in the middle, though it's probably overkill haha).
