I can see how audio podcasts can be done from the video tutorial, but can video podcasts be done as well that can also be viewed through iTunes?

Yup, video podcasts are done exactly the same way as audio, everything will work as expected as long as your video file is to iTunes specs. (you may want to run it through feedburner, though, to get a custom image, title, and feed description)
