If the Node Access module is enabled, a user should be able to specify a list of users to grant permissions to when each template is instantiated. It would probably be best to replicate the Grant tab, and apply those settings to all created nodes.

It turns out for the project I'm working on that simply being able to set the node author will suffice. That will have the advantage of not requiring the node access module.

As this is really a different feature, I'm marking it as postponed in case someone else decides it's useful to them and feels like writing a patch :)
