When someone purchases using Google Checkout and Ubercart, they get this email sent to them AND a NEW user account is created with their purchase (and subsequently role updated).

Why is this? This not only confuses the customer, it completely voids the function of automation. I have to manually change these users accounts to reflect their new role because of their new purchase. How can I stop Ubercart from doing this?

Island Usurper commentedUbercart makes everybody create an account when they checkout. It's up to you to make Drupal's settings make this easier. I wouldn't get rid of that email completely though. Unlike Ubercart, Google Checkout won't (and can't) automatically log them in to use the new role they just bought.
