I'm unable to see any indication that a message has been sent in the watchdog - regardless of the sent method (debug/ mail).
Debug mode is disabled.

Records are added properly to {messaging_store}

Actually they shouldn't be logged to watchdog anymore, so I've dropped that part and updated the description. (If you want to see messages on the page as they're sent enable Devel module)
