Hello,
In my current version on Drupal 6.x, the notification e-mails are not showing the e-mail address of the commenter.

The e-mail address of the commenter is only shown for anonymous users who provided an e-mail address when placing the comment. For logged in users only the user name is shown.

Is there any way you could change this?

It would be possible, yes. I believe when #273533: Add Token support gets implemented, you will also be able to show this information (depending on whether some patches for the Token module get in).
