Need to provide an additional fieldset on the admin form with two additional fields, one for default thumbnail and one for default node view and save the settings in Drupal variables. Also need to make the provided views dynamically react to the new variables.

Marking this as "fixed" (will be committed shortly). You can now pick the thumbnail to use in the gallery view using the settings page, instead of altering the view - you could alter the view anyway, but this keeps things in one place for non-techie users.
