It would be great if when changing a value in an editable field the old one could be put into a special node or something else. For example we could indicate the value for a certain date in the node. This would make it possible for us to create a sort of history of the editable node. It would be extremely helpful in case of making a questionnaire node where the value can change. What do you think about it?

No, node revisions and views revisions can't do that.
