I'd appreciate a lot, if you could point me to a plain vanilla tutorial on how to install Flashvideo with all the new features and changes..., using filefield and if possible flowplayer, the available documentation is a bit confusing since it does not reflect the new features and changes available in the module.
Can this new version (6.x-1.5-beta1) be used in a small production site, where videos will
be uploaded having been previously compressed using H.264 and .flv?

You might check out the new Help section that comes with the latest version of the module (/admin/help/flashvideo). This includes an installation and configuration section with setup instructions. We don't cover Flowplayer because I don't think there has been widespread success with that player yet. Please contribute some setup instructions if you figure out a good way to get it set up and configured!
As far as using the beta release on a production site, I feel confident about this release myself, but I'll feel even more comfortable after we get some more people testing it out. We'll see how many problems, if any, crop up in the next days/weeks. I don't think I have experience adding FlashVideo into a site that has previously-uploaded FLV and MP4 videos, but I can't think of a reason off the top of my head why that should not work.

In the help section of FlashVideo I read: "FlashVideo automatically converts your videos to the very common Flash format and creates a thumbnail image of any newly uploaded video"
But what happens if I don't want to convert my videos to the flash format, that is if my videos have not been uploaded yet to the files directory and they allready are in the flash format being .flv or (H.264) mp4; that is they were given to me in the .flv and (H.264) .mp4 formats and all I want is to upload them to the files directory and display them in the previously made content type node?
What CCK FlashVideo fields should I enable when creating a new basic plain vanilla content type that can enable me to upload said videos and display them without having to re-compress or re-transform them via ffmpeg?

Travis could probably answer this question better than I can. I haven't experimented with the conversion scenario that you're discussing.
I did remember one thing from the module code that might be useful for the first part of the scenario you've described above; this is a comment from flashvideo.module:

Again, thanks for holding the line, and to everyone I apologize for not being around as much as I would like. I am on the final chapter of this book and plan on spending some more quality time with FV when I am through with that endeavor. As for your question regarding not converting certain videos. The FlashVideo module will not try to convert any file that is FLV format, but unfortunately will try to convert all others (unless you put NOCONVERT in the name). In all honesty, I am not a fan of the whole "NOCONVERT" thing and have planned on phasing that out. What I would like to do is create an exclusion list of some sort where the user can list off all file types they do not want FlashVideo to convert. This way it works for any file type without having to hack the file name.
Hey Mark.... maybe at DrupalCon, you and I can personally work to get the next release out the door. I know that there is a code sprint on Friday or Saturday, and maybe you and I can get together then.
