I've created a new content type, disabled the Body field, and added a couple other fields. After saving the changes, I'm not seeing all my fields displayed on the ad content page/form for this new content type. It's only displaying the Title field and nothing else. Any idea why this could be happening?

Did you set the permissions? You have to have the permission to edit these fields and of course also to view them.
