I hope someone can help me, what I would like to achieve is multiple contact forms and the option to put them into any page. Ideally I would like to specify which category in the code (not give the end user the option) and also the subject line if possible?

With the Contact Forms module you can have multiple contact forms where the category and subject is specified in the url.
You can not put them on any page though.
You could try the webform module.
