Taxonomy???

Hi

Can someone help me. I have this project:

I have all the countries in Europa – and have too divide these countries in smaller sections – in every section I must list a lot off categories like = Hotel, Bed & Breakfast, Restaurant, …..
And in these categories I will list all the Hotels, Bed & Breakfasts, Restaurants …..

It´s a lot of data!

How do I do that? I can´t find the perfect solution with Taxonomy. I have tried the Taxonomy VTN (http://drupal.org/project/taxonomy_vtn) but it is still not enough.
