Is it possible to have an automatic extension coded into the system? For example, if someone bids in the last '30' seconds the auction is automatically extended by '10' minutes.

It would be very possible, but not a feature I'm going to add myself, sorry. If you're up for it, check out the Ubercart API sample module and implement it yourself.
