Issue Summary
It would be great if we can control which taxonomy category from either calais or our own that the MoreLikeThis would work with.

Do you mean limit it to a particular vocabulary? It currently works across all.

Yes it would be great if we can define which calais or our own define taxonomy terms to be used with this module.

I agree. I thought I misconfigured More Like This when I noticed my client using it incorrectly by using terms that exist in vocabularies other than the one i specifically created for More Like This to rely on.
