Do you guys know what field type can I use if I need to add a field called status and I need this field to be modified only by certain roles and give a default value what a user fills out a form?

I'd suggest using a hidden field, which is only editable by users with "view webform results" permission. For a feature request, I think this should be merged with #313639: Public vs. private components .
