I loaded the "Quotes" module and set it to show 1 quote at a time...which it does in the sidebar where I configured it to go. What I don't understand is why all the quotes display in the center content area as well.

I would guess you are talking about the home page in which case you probably has "Promoted to front page" as the default for quotes.

If this is correct and not what you want visit Administer › Content management › Content types,click edit for the quote type. Click 'Workflow settings' and uncheck "Promoted to front page"

To unpromote existing quotes visit Administer › Content management › Content
Select the radio next to 'Type' and select the quote content from the drop down. Click "Filter".
Content shown should now be limited to quotes. In the list next to "Title" click the check box (this should select all the content). Under "Update options" select "Demote from front page" and click "Update"

If you have lots of quotes (more than fits on the admin page) refine the filter by selecting "status" promoted and clicking "Refine". Continue demoting quotes till you have them all.
