This is not a drupal showcase request. Should probably go in the theme project itself, hm?
For all non-color-module themes, you open the themes css files and change the colors defined there. You may need to edit the images also. Done.
For themes that support color.module, visit the themes configuration page (and make sure color.module is enabled).

Looks like sky does not use color.module. You will have to edit header gradient image.
get firebug to assist with your CSS development. Then start reading up on CSS and theming in the handbooks.
