I haven't been able to find any documentation on how to use this module.

Some sort of instructions would be appreciated.

Installing the module will create a new CCK field type that you can add to each content type on your site.

Here's some brief instructions on setup/usage:
Edit your preferred content type (located at http://example.com/admin/content/types), click the "Add Field" tab, and create a new field with a Field Type of "View Field". Once you've configured the options for this field and saved it, click over to the Manage Fields tab on your content type and change the Weight to determine what order your field will display among other fields when creating/editing each node. Repeat these steps for each Content Type that you want to have an embedded view field.

Help with documentation would be most welcome. This would be best achieved by providing a patch for the README file or starting a handbook page here on d.o. If anyone is interested in doing this, it would be greatly appreciated.

Also open to suggestions/patches on cleaning up the UI to make it more user friendly.

I'm sorry, but there is no maintainer for Viewfield for Drupal 5 and D5 is EOL very soon (with the release of D7).
