This was in the INSTALL.txt file. I had the same question as you, I can't find any other information about what access profiles are for.
CREATING A PROFILE
********************************************************************
Profiles are a method of defining the complete security configuration
for a node. So within a single profile the system administrator can
define exactly how a node will provide security. This means that users
with less knowledge can secure nodes without fear of exposing nodes to
users which should not have access.

Erm, what does that mean? I don't get it at all.

Could someone explain profiles?
* Made a group - all good
* Made a profile - ticked group 'view' in profile
* Saved
* Edit profile - group 'view' is unticked.
That's confusing.
I go to Create page (as admin) - both the Profile and the group are visible.
An editor goes to profile - just the 'group' options are visible. Never profile options.
I only want to show 'profile' options to my editors in create content page.
I'm completely confused as to what 'profiles' are or do. Any help would be greatly appreciated.
Cheers

Actually i think there might be a bug in the module...when I tick the view box in a profile - it's doesn't get stored....think this might the crux of the problem.
