Topics For Posts - How to force choice from a list.

Hey There. I am looking for a way to make users pick from a specific set of topics (subjects) for their posts. Basically I am talking about having people review content. There will be multiple user reviews for the same piece of content so for consistency I would like the topic/subject to be chosen from a list instead of free text entry. Can anyone suggest how to do this? Much Thanks!
